Crème Brûlée with Basilur Magic Nights tea

The third and final recipe is for a well-known and beloved dessert. Our version of Creme Brûlée is unique due to the addition of Magic Nights tea essence, which gives it fruity flavor notes with noticeable sweetness of strawberry, apricot, pineapple, and papaya.

What ingredients are needed to prepare Crème Brûlée?

2 teaspoons of Magic Nights tea

4 egg yolks

2 cups heavy cream

½ cup sugar

1 teaspoon sugar for caramelizing (for each ramekin)

Pinch of salt

How to prepare Crème Brûlée?

  1. Preheat the oven to 160℃.
  2. In a medium saucepan, bring the heavy cream to a simmer. Do this over low heat.
  3. Remove the saucepan from the heat.
  4. Add vanilla extract, a pinch of salt and tea leaves. Leave to infuse for 10 minutes.
  5. After infusing, strain the cream mixture through a sieve to remove the tea leaves.
  6. In a large bowl, whisk the egg yolks and sugar until light and fluffy.
  7. Into the large bowl, pour half of the hot cream and tea mixture. Stir vigorously to temper the mixture. Repeat with the second half of the cream and tea mixture. Pour slowly to prevent the eggs from scrambling.
  8. Prepare a bain-marie. Boil 2 cups of water. Place the ramekins on a deep baking tray, then pour the boiling water halfway up the sides of the ramekins.
  9. Divide the tea cream evenly into four ramekins.
  10. Place the baking tray in the oven and bake the cream at 160 for 45 minutes.
  11. To check if the Creme Brûlée is ready – gently jiggle the cream; the center should wobble slightly, and the sides should be set.
  12. Chill the creams in the refrigerator for at least 3 hours or leave them in a cool place overnight.
  13. Before serving, sprinkle the top of the cream with a teaspoon of sugar. Then use a blowtorch to brown the sugar, so that it caramelizes to a deep golden shade.
  14. Allow the sugar to harden for about 30 seconds before serving.
